Feisty Arugula and Radicchio Salad

Full of antioxidants and phytonutrients, this salad balances the sweet bitterness of arugula and radicchio with the freshness of mint and citrus. Light and bright, perfect for a brunch.

Feisty Arugula and Radicchio Salad


1 Lb of Fresh Baby Arugula

1 Head of Fresh Radicchio

1 Bunch of Fresh Mint

1 English Cucumber

5 Radishes

3 Blood Oranges

2 lemon - Zest and juice

1/2 C Coconut yogurt

2 Tbs Extra Virgin Olive Oil

Sea salt and pepper to taste


1. Thinly slice radicchio, mint, cucumber, and radishes

2. Peel the oranges and cut the wedges

3. Toss it with arugula

3. In the mason jar mix the dressing. If desired, use water to thin the dressing.

4. Toss is all together
